Effortless Entertaining Cookbook: 80 Recipes That Will Impress Your Guests Without Stress by Meredith Steele

This book is chock-full of good recipes, which Steele divides up by season.

I made her Asparagus, Green Onion, and Feta Frittata in the Spring section to make a really wonderful and sexy brunch today.

I am a great cook.* I usually dont use recipes. Rarely do I use recipes and when I do, they are only for guidance since I know how to cook and have a strong base of cooking and baking knowledge that helps me be able to form recipes out of whatever ingredients I have on hand.

So it was with this recipe. I replaced the asparagus with spinach and I replaced the green onion with mushrooms. I replaced the feta with extra sharp cheddar.

The key here, the real secret here, is to mix two teaspoons of dijon mustard in with the eggs.

Actually everyone ate this dish without adding pepper, salt, and/or hot sauce, which I am INORDINATELY proud of and feel very happy about. Good recipe if no one feels any additions are needed. (You might, Im just talking about my personal experience.)

I served this as a sexy brunch with hot coffee with cream and sugar, marble rye toast and butter. And moscato.

I found this cook time to be wildly inaccurate. I must have at least doubled it for the thing to be cooked through. Unlike her, I used a cast-iron skillet and then put that sucker directly into the oven. I adore cast-iron skillets. ADORE.

12 large eggs

2 tsp (10 mL) Dijon mustard

1/2 tsp salt

1/4 tsp fresh ground black pepper

3 tbsp (45 g) unsalted butter

2 cups (203 g) thin asparagus, trimmed, cut into 1-inch (2.5 cm) pieces

2 green onions, trimmed and cut into 1/4 inch (6mm) pieces

4 oz (113 g) crumbled feta cheese



I like how she lists her ingredients in metric measurements, as well as imperial.

Of course, remember, I wasnt making this recipe. Mine was a spinach, mushroom and cheddar frittata and I didnt measure any of those three ingredients because I know how much is a good amount to put in. How comfortable you are messing with a recipe is your own call, though.

Preheat the oven to 400 degrees F. (205 C)

In a large bowl, combine eggs, mustard, salt and pepper and whisk until eggs are slightly frothy, about 20 seconds.

In a 12-inch (30 cm) nonstick skillet, melt butter over medium heat. Saute asparagus and onions until asparagus is tender, about three minutes. Pour egg mixture into the skillet, add feta and stir to combine all ingredients. Remove from heat, transfer to the oven and bake for 15 to 20 minutes until cooked through and a toothpick inserted into the middle comes out clean.

Separate the frittata from the skillet by running a flexible spatula around the edges of the frittata; then slide the frittata onto a serving plate or cake stand. Slice into eight wedges and serve.


Steele includes wine pairings with each recipe because her husband is a sommelier. This one she suggests pairing with White wines such as Savignon Blanc, Gruner Veltliner or Verdicchio.

UPDATE: Made this twice more, once with broccoli and mushrooms and cheddar, once with carrots, peas, and corn and cheddar. Ive also tried using a pyrex pie plate instead of a cast-iron skillet, with wonderful results. 12/04/2016

BLACK PEPPER-BALSAMIC STRAWBERRIES
Serves: 8
Prep Time: 10 minutes
Set Time: 30 minutes

INGREDIENTS:
2 lbs (907 g) strawberries, halved
3 tbsp (44 ml) aged balsamic vinegar
2 tbsp (24 g) granulated sugar
1 and a half tsp (3 g) fresh ground black pepper

In a large bowl combine all ingredients and mix until combined. Cover and refrigerate for at least 30 minutes or up to 4 hours. Serve as is or with a touch of whipped cream.


This was excellent. I eyeballed the amounts. I let it set in the fridge for one hour. I would have let it set longer, but everyone was clamoring for it so I took it out a little earlier than planned. It was amazing! You can eat it without the whipped cream if you want - its perfect without it. Or you can add that creamy goodness! I put the whipped cream on the side and allowed people to decide themselves. Definitely a great dish for spring when strawberries are in season. I used Dark Cherry Balsamic Vinegar.

She says to serve all four things at brunch, but I didnt feel like being overwhelmed, so I didnt make all four things. I just made this frittata and a homemade loaf of white bread. After that is Easter Lunch. Ill keep you posted.

EASTER BRUNCH 2019 04/21/2019

1.) OVERNIGHT CROISSANT FRENCH TOAST BAKE WITH COFFEE RUM SAUCE

Serves:8
Prep Time: 10 minutes
Cook Time: 35 minutes

French Toast Bake Ingredients:
8 croissants
I only used three. I dont know what size croissants she was using, but three filled the whole pan.
4 large eggs
1 1/2 cups (354 ml) heavy cream
1/2 cup (117 ml) pure maple syrup
1 tsp (5 ml) vanilla paste or extract
1/2 tsp ground cinnamon
1/4 tsp fresh grated nutmeg

Coffee Rum Sauce Ingredients:
1 cup (236 ml) coffee ice cream, melted.
2 oz (59 ml) dark rum


I used coffee ice cream for the coffee lovers and rum ice cream for the rum lovers. I used Bicardi Black for the rum.

Butter a 9x13 -inch (23x33 cm) baking dish. Tear croissants into 2-inch (5 cm) pieces and set into the baking dish. In a large bowl, whisk to combine eggs, cream, maple syrup, vanilla, cinnamon and nutmeg. Pour over croissants and gently toss to make sure the croissants are coated with custard mixture. Cover and refrigerate overnight. Before baking, allow the dish to sit at room temperature for 30 minutes.

Preheat the oven to 350 F (175 C). Bake uncovered for 35-40 minutes until golden and the custard is set but is still soft.

Combine melted coffee ice cream with dark rum and serve over the warm French toast bake.


SOOOOOOO GOOOOOOOD, makes your kitchen smell AMAZING, everyone LOVED this. There was none left.

2.) A mixed green salad with blue cheese, olive oil, salt and pepper.

4.) BEES KNEES COCKTAIL WITH THYME HONEY

Serves:8
Prep Time: 10 minutes

Thyme-Honey Syrup:
1/4 cup (59 ml) honey
1/4 cup (59 ml) boiling hot water
4 springs fresh thyme

Cocktail:
16 oz (two cups [473 ml]) gin
6 oz (3/4 cup [180 ml]) fresh lemon juice
4 oz (1/2 cup [120 ml)] thyme-honey syrup

In a heatproof container, combine honey, water and thyme and stir until the honey has dissolved. Allow to cool, then remove the thyme. This can be done a day in advance.


CARMENS NOTE: You are making a simple syrup out of honey instead of sugar.

The key to making this cocktail spectacular is having it as cold as possible. This is traditionally done by shaking with ice in a cocktail shaker, but standing around making individual cocktails as guests enter the door can be a bit stressful. So to make this incredibly easy, combine gin, lemon juice and thyme-honey syrup in a carafe or a pitcher 30 minutes before the party and place in a bucket full of ice to get really cold. Once guests arrive, pour equally into 8 coupe glasses and garnish with a lemon peel or sprig of thyme.

I put the pitcher in the freezer.

WARNING: This drink is STRONG. Its basically pure gin. She says to serve it at the beginning of the party, and I guess that depends on how sloshed you want people. I served it during the later courses.

I know it's Little Rock, so perhaps the scene isn't the most happening, but what place charges 10 cover but barely fills up.
